This puree is so creamy and delicious! Sweet potatoes rock my world. They are a wonderful vegetable ranked high among peers in nutritional value. In fact, considering fiber, complex carbohydrates, protein, Vitamin A, Vitamin C, iron and calcium, the sweet potato ranked highest in nutritional value according to a 1992 study by the Center for Science in the Public Interest. Who knew something so delicious is also good for you?
The sweetness of the potato and apple blend together nicely. I had to add a little spice – nutmeg and cinnamon – to marry the two! The Little Man ate this one up as though it were his last meal. So there you have it.
Perfect For: 7+ months
Time required: 15 minutes
Servings: 5
Tools:
- Peeler
- Cutting knife
- Cutting board
- Beaba or pureer and steamer
______
What it takes:
- 1 sweet potato, peeled and chopped
- 2 sweet apple (I used fuji), peeled and chopped
- A dash of nutmeg
- A dash of cinnamon
______
Method:
- Grab your steamer and add the potatoes first since it’ll take them a bit longer to soften
- After about 5 minutes or so, add the apples
- After about 10 minutes or so, add you spices and blend to a puree. It may be easier to steam the potatoes then the apples separately, depending on your gear. Also puree with some reserve water. The puree can be very thick otherwise. My little man doesn’t particularly enjoy thick (erh..gummy) purees!
- Serve and store remaining
______
As always store what you are going to use within the next 3 days in the fridge. Any remainder should go in the freezer.
