Carrot Apple Nutmeg Puree

This puree is very sweet. Add a little nutmeg and hits the spot.

Time required: 20 minutes (mostly spent steaming)

Servings: ~20 ounces or ~4 servings

Tools:

  • Peeler
  • Cutting knife
  • Cutting board
  • Beaba or pureer and steamer

What it takes:

  • 2 large carrots, peeled and chopped
  • 2 sweet apples (I used Fuji), peeled and chopped
  • 1 dash of nutmeg (or however much you want based on taste)

Method:

  1. Grab your Beaba or Steamer
  2. You can steam the carrots and apples together by steaming the carrots first for about 8 minutes, then adding the apples for 8-10 more (or until soft); I chose to steam the two separately. I steamed carrots for 15 minutes, then set them aside and steamed the apples for 10 minutes
  3. Then combine the carrots, apples and nutmeg, and pureed
  4. Serve and store remaining

As always store what you are going to use within the next 3 days in the fridge. Any remainder should go in the freezer.

    Hi! I can't remember how I came across your blog (googling homeade baby food maybe?), but I'm also making my almost-9-month-old's food & have found your blog very helpful. I have a question about cooking with carrots. Do you worry about the whole nitrate thing or do you buy organic or how does all that work? All I've read is that I should use store bought carrot purees because the companies have strict guidelines on the level of nitrates in the food. Of course, I'd much rather make my own, but I've been worried about the nitrate thing. Anyway, I just wanted to know your thoughts or if you knew something I didn't know about cooking your own carrots. Or maybe I just want affirmation that I wouldn't be the only one ignoring that advice to use store bought carrot puree. :-) Thanks!

    Hello there! I definitely worried about carrots but as one who doesn't like to live in fear I opted to do some research AND talk to my son's pediatrician. What I found is that there is very little chance of nitrate poisoning on your 9 month old child from eating carrots. However parents should avoid certain foods before 3 months of age BUT by the time your little one is ready for solids, his or her stomach should be able to handle exposure to nitrates.

    The American Academy of Pediatrics emphasizes this point in a paper:

    - Only 1 case of infant nitrate poisoning from ingestion of plant nitrates has been reported in the US.

    - The intake of naturally occurring nitrates from foods such as green beans, carrots, squash, spinach, and beets can be as high so these foods should be avoided before 3 months of age.

    - Some commercially prepared infant food vegetables are voluntarily monitored for nitrate content by private industry, including spinach, squash, and carrots.

    Definitely speak with your pediatrician about it but in my opinion you are safe.
