Apricot Puree

I can hardly believe my littler boy is now past the six month mark and experimenting with solid foods. Part of me is sad but another part of me is a little too excited to pull out the BEABA and start experimenting with baby’s first foods.

Yesterday I walked up to the farmers’ market to see what I could whip up for my little bugger. Sadly, I didn’t find much beyond potatoes, carrots and lots of berries. He already tried potatoes and carrots. Potatoes will great success, carrots not so much. Berries are a little too risky for first foods. So I went back home and found four apricots delivered by our CSA this pas week. Apricots are a wonderful little fruit, full of Vitamin A, Vitamin C, Iron, Fiber and Potassium.

So there you have it.

It is easy:

  1. Wash the apricots
  2. Peel the apricots
  3. Cut up the apricots
  4. Put in your BEABA or blender of choice and puree
  5. Serve cool or slightly warmed. I served it cold because he is teething and I thought the coldness would help his gums feel better.
  6. Store any remaining in the fridge. Freeze whatever you think you might not use up in three days.

Four apricots made about 7 ounces of puree. When I served it to him this morning, the look on his face trying the very sour fruit for the first time was priceless. I tried to puree. It was quite sour so I added breast milk to make the puree a bit creamier. He finished the serving and was very happy. I am dying to see what this apricot puree does to my littler one’s diaper! Ok, well, not dying but I am very curious.

Cod Cakes

My 15 month old continues to refuse meat and fish straight out. He will however eat broken bits of food in yogurt, cream cheese, sour cream (I am sensing a theme) and anything that can be use as a cohesive to his spoon as a vessel to transport the food to his mouth. A bit frustrating but every kid will have his or her quirk. So I can live with this one because – ah-hem – this “phase” will pass. Right? Yes, it will. Have faith my friends. Here is a quick and easy fish cake recipe adapted from Annabel Karmel’s Rosti Salmon Cake recipe. This link is similar to the one in her book “First Meals” but she used raw grated potato to bread rather than breadcrumbs and a few other minor differences. I used cod instead of salmon and cheddar cheese instead of gruyere. I am certain your little one would devour either one.

Great for: 12 months +

Gear:

  • Cutting Knife
  • Grater or Microplane (I used a microplane)
  • 1/3 measuring cup or Pyrex
  • Tablespoon measure
  • Bowl for lightly beating egg yolks
  • Pot for boiling potatoes
  • Frying pan

Food:

  • 1 pounds medium sized russet or fingerling potatoes
  • 3/4 pounds cod fillet, skinned
  • 2/3 cup cheddar cheese
  • 2 medium egg yolks, beaten
  • 2 tbsp chopped parsley
  • 1 small onion, peeled and finely chopped
  • Breadcrumbs for coating cakes
  • Salt and pepper
  • 1/3 cup vegetable oil

Method:

  • Get out a pot, fill with water and lightly salt, and cook potatoes in skins for 20 minutes. Drain and leave to cool.
  • Cut cod into bite sized chunks and mix with cheese, yolks, parsley and onion. Season with salt and pepper.
  • Peel and grate the potatoes and stir the potatoes into the salmon mixture
  • Use your hands to shape the mixture into cakes or patties (about 8 cakes typically)
  • Coat each cake with breadcrumbs
  • Heat oil in frying pan and cook the cakes until browned and cooked through (4-5 minutes on each side approximately)
  • Place cakes on paper towels to cool and crain excess oil
  • Serve with a dipping sauce of your choice such as mayo and lemon or serve the cakes on their own, and store (freeze whatever you don’t plan to use after three days)

Goodness Factor: Omega-3 fats, Calcium, Niacin, Vitamin B12, Potassium, Protein, Vitamin B6, Vitamin A, Vitamin C, Vitamin D, Vitamin E, Phosphorus and Selenium.

Quick & Easy English Muffin Pizza

A quick and easy meal that your kids will be sure to love. One of the greatest things about this simple meal I that you can customize it to your kids liking. For example, my 15 month old loves peppers – red, green, yellow, roasted red – right now. In addition, there are great sources of iron, protein, fiber and calcium in the basic ingredients. Add fruits or vegetables and you have an even more nutritious meal.

Food:

  • Whole wheat English muffins
  • Whole milk shredded mozzarella cheese
  • Pizza sauce (we make our own but there are plenty of wonderful pre-made sauces in the grocery)
  • Topping of your choice (peppers in our case)

Method:

  • Cut English muffin in half
  • Top with sauce
  • Add toppings
  • Cover with cheese
  • Put in oven to toast for 5-10 minutes (to your liking) or in microwave for a few minutes to melt cheese and warm sauce
  • Cut in desired shape (you could always make it fun for the older kids by cutting a star or something even more creative)

Seasoned Tofu Bites

Between the little man’s molars coming in and transitioning to “big people” food, I continue to worry about my little man’s diet.  I mentioned I integrated a multi-vitamin but for an added punch of protein and iron, I’ve also began to sneak bits of tofu, chicken, egg, etc into his quesadillas and his grilled cheese, both suddenly “staples” in our household. Well, I decided sneaking around wasn’t really my style so I decided to make tofu a little more fun (ah-hem, a little more like its not tofu. Okay, so technically that is still sneaky but throw me a bone.) for the little man. So alas we have a hit, “tofu bites” and the little man (and not to mention the mama) loved these suckers. Mmmm…

Servings: 4 (but depends on if you are eating them too. These bites are yummy.)

Time Required: 20-25 minutes

Gear:

  • Small bowl for egg
  • Plate to spread flour in order to coat tofu
  • Small bowl for breadcrumbs
  • Measuring Cup for breadcrumbs
  • Cutting knife for tofu
  • Baking Sheet
  • Foil
  • Oven
  • Spatula to remove tofu
  • Cooling rack or plate for tofu

Food:

  • Firm or extra firm tofu
  • 1 Egg if you are using eggs, 3 tablespoons egg whites if not
  • 3/4 cup Italian Seasoned Breadcrumbs (I used Italian seasoned breadcrumbs to avoid having to add additional spices but if using plain, add paprika, curry or some spice)
  • Black pepper
  • Flour for coating tofu
  • Sweet and sour sauce (I ate the bites with a Thai sweet and sour sauce. My little man was curious in the sauce but didn’t ask for more or start dipping like crazy. you can get creative and find a dipping sauce with yogurt or a tomato base or simply serve sans dipping sauce. The Italian breadcrumbs add a lot of flavor.)

Method:

  1. Preheat oven to 350 degrees
  2. Get out a baking sheet and line with foil
  3. Open your tofu, place on paper towel on a plate and weight with a can or another plate. You don’t have to do this approach but I like to do so to remove some of the water. It is best to bake with cool or cold tofu but warm works fine too.
  4. Cut tofu in shape of choice. I cut our tofu into little squares/rectangles to make for easy finger food but you can make wedges, long slices or more creative bites for the older kiddos!
  5. Spread flour on plate or flat surface
  6. Whisk egg in bowl if not using white, or pour whites into a bowl
  7. Measure breadcrumbs in another bowl and add a few grinds of black pepper
  8. Coat tofu with flour
  9. Dip tofu in egg
  10. Coat tofu with breadcrumbs
  11. Place Tofu Bites on foiled baking sheet
  12. Place in oven and bake for 15-20 minutes
  13. Pull from oven, serve warm (be careful of the inside!!) with a dipping sauce of your choice or serve alone
  14. Store remaining in fridge
